Spend an extraordinary evening with Chef/Owner James T. Canter of Guerilla Gourmet, Chef Toby Soto with Humo Creative Catered Cuisine, Michael Grimes, and Tatu Herrera of Tatu’s Food Debauchery as they prepare a three-course meal inspired by San Antonio’s Native Payaya Indians. The Payaya Indians were known as a Hunter-Gatherer culture. A native South Texas band that inhabited the “Yanaguana,” or the river known today as the San Antonio River. Indulge in inspired dishes created by the Chef Cooperative while Dr. Harry Shafer, Curator of Archeology at the Witte Museum discusses the ways the San Antonio River and its natural resources played an integral role for the of the Payaya Indians.
